As most people who read my blog know, I have lived around the world and back. Once upon a time, I found myself in Nigeria. When it came to shopping and cooking, I had to be creative to make sure we had everything we needed to eat. There was no web to search, (we didn’t even have a phone.) and I felt cut off from the rest of the world, but it didn’t stop me from finding things I needed. I had a little bit of a struggle because we couldn’t just go to the store and buy a box of cereal or go buy doughnut. Everything had to be made from scratch. I could find oatmeal, and I made a lot of oatmeal for breakfast. We raised chickens so we would always have eggs, and when I found a stick in the bread we were buying, I started making homemade bread all the time. However, we didn’t want to eat just hot cereal or eggs and bread for breakfast all the time. We wanted a variety. I began coming up with solutions. I made homemade cold cereal, and I may show you some of those recipes some time, but today, I am going to show you one of the many coffee cake recipes I came up with.
I began putting the cake together by putting 2 1/2 cups of flour in a bowl.
Next, I added 1 1/2 cups of brown sugar to the flour.
To the flour and brown sugar, I added 1/2 cup of butter and a teaspoon of vanilla. I mixed it all well and mashed the butter in.
After I got the flour, the brown sugar, the butter, and the vanilla mixed well, I took out a cup of the mixture and put it aside in a bowl.
I poured a cup of milk. To this milk, I added a drop of vinegar and a teaspoon of baking soda.
After setting part of the flour, brown sugar, butter, and vanilla mixture aside in a small bowl, I took a cup of milk with the vinegar and a teaspoon of baking soda in it and poured it into the big mixing bowl with the flour, brown sugar, butter, and vanilla and mixed it up. The dough was stiff like cookie dough.
After everything was mixed, I greased and floured a large pan. I used to have a large rectangular pan I did this in, but this is a pizza pan with tall sides.
I put the mixture from the big bowl in the pan, and since it was very thick, I had to use a spoon and spread it around. After that, I took the mixture from the small bowl that I had set aside and sprinkled it across the top of the cake.
I have made a lot of people happy with this recipe and others like it through the years. the nice thing is that this is extremely easy. Many coffee cake recipes call for yeast and all kinds of other complicated things, but this one is not complicated at all, and it tastes great. Besides making things like for breakfast when we were overseas, I made them in the States too. When we lived out in the country and other people were in town running to a local doughnut shop to make Sunday breakfast before church a treat for the kids, I was making things like this for my kids, and it is much cheaper. If you live out in the country, there is no running to the local doughnut shop, and no one wants to stand over a stove frying doughnuts all morning just to be nice to their family. This is quick and easy, and it makes everyone happy. My family never drank coffee, but this is great with a cup of hot tea, or hot chocolate, or a glass of milk. However, if you are a coffee drinker, you would enjoy it with your coffee too.
