Thanksgiving is tomorrow, and Christmas is coming. This is the time of year for lots of nice baking. If you look earlier in my blog, my own special pumpkin pie recipe is there, and today, I am going to share my recipe for apple cake.
I begin with 4 good sized apples. I peel them, core them, and cut them into bite sized pieces. I don’t put them in the bowl yet.
I preheat my oven to 350 degrees Fahrenheit.
Next, I put two eggs, 2 teaspoons of vanilla, and 1/2 cup of cooking oil in a mixing bowl. I used my wire whip and whipped them together.
To the bowl, next I add 2 cups of flour, 2 teaspoons of baking powder, and 2 teaspoons of cinnamon. I mix it all together. It is not going to turn into a cake batter. It turns out more like a dry cookie dough. When I add the apples and they begin to cook, they will provide more liquid for the cake.
Next, I add the apples and a cup of nuts. and mix it all around. I get a large cake pan and grease and flour the pan. Next, I put the apple cake mixture in the pan.
I put the pan in the oven for 45 minutes. After 4 minutes, I have a delicious apple cake. When I told my daughter I was going to make apples cake today, I heard her tell her husband how happy she was because apple cake is so delicious, and she has only eaten my apple cake. My son in law has never eaten apple cake, but the thinks it sounds great. and it is.
Many people put a kind of brown sugar icing on the cake, but I never did that. I always considered the cake itself good enough without icing. I like to bake, and I like deserts, but I actually don’t always want to eat them overly sugared up.
