Turning a Traditional American Dish into a Korean Dish: Yang Nuem Chicken.


We have a very international family. When we cook at our house, we have to take into account that we all have different backgrounds. When my Japanese son in law comes to visit, since I can make Japanese food, I make Japanese food because all my kids like Japanese food. When we are with my Korean son in law, we have learned that his favorite dish is yang nuem chicken, and it is easily made from an American dish. After I have made fried chicken, all we have to do is make the right sauce for the chicken, and we can turn it into a Korean dish that my Korean son in law loves.

The main ingredients are gochoojang (red pepper paste), ketchup, cooking oil, sugar, and water.

I have never made the sauce. My daughter makes this sauce for him. When you order fried chicken to be delivered to your house in Korea, they also bring this kind of sauce for you to eat on your chicken. My son in law always loved it, but didn’t know how to make it, so he and my daughter got in the kitchen and began experimenting so she could make the sauce for him.
The main ingredients are: cooking oil, gochoojang (red pepper paste), ketchup, and sugar. My daughter laughs about the sugar, but I have seen the Japanese use sugar in many of their dishes, and when I make homemade spaghetti sauce, I put a little sugar in it to take the tangy feel out of the tomatoes and make it taste more like spaghetti sauce and not just tomato sauce. The sauce can be as spicy as you want it to be, just slightly spicy or very spicy. It is one of those things you make to your own taste.

Begin by putting a little cooking oil into a sauce pan and turning a low fire under it. Add a table spoon of the gochoojang (red pepper paste), and mix it around.

Next, add about 1/4 cup of water and keep mixing. Next, add a couple of tablespoons of sugar, and keep mixing. Next, double the size of the sauce by adding ketchup.


When you add the ketchup, the sauce size will double.

Use the same among of ketchup of the amount you already have in the pan. Keep cooking it and stirring it until it becomes a sauce, and then turn the fire off, and your yang neum sauce is finished.

Now, take a piece of American style fried chicken and cover it in the yang nuem sauce, and you have yang nuem chicken. Remember, it could be spicy.
